Gin

Gin is gaining in popularity among spirit consumers and has quite an interesting history that
starts in the Netherlands initially created for medical purposes. The internal European wars and
the growing trading routes opened a new market for this liquor that reached fame and fate over
the centuries.
The initial Genever mutated into gin and the birth and rise of the cocktail gave it more
opportunities to grow.
The new wave gins are now offering a lot of innovative aspects, broadening the taste and then
the consumer appetite. The United States are now a very important producer and market for
consumption, while Asian countries are also emerging and even one of them, the Philippines,
represents 27% of the global sales!

The legal definition of GIN in the USA is quite broad:

  • Gin must derive its main characteristic from juniper and be bottled at 80 proof.

Gin is produced mainly through different methods:

  • The botanicals are mixed with a diluted neutral spirit and then distiled
  • The botanicals are exposed to alcohol vapors (vapor infusion)
  • The botanicals are macerated or percolated in a spirit

A “distiled Gin” must be made by distillation, and botanicals or flavors may not be added.

There are different styles of gins:

  • London dry gin
  • Plymouth gin
  • Old Tom gin
  • New wave or contemporary gins

And for some brands, there is a”Navy Strength” bottle at exactly 114 proof.
