Redbreast is a whiskey from Ireland. It is distilled three times and made from a blend of malted and unmalted barley at equal parts: a pure pot still. It is matured in sherry casks.

The is the undiluted version of the Redbreast 12 YO. It is quite strong in alcohol which allows to avoid the filtration of the fatty acids, which offers more aromas in this version, preferred by the connoisseurs. As it is straight from the cask, the alcoholic percentage varies from a cask to another, and then 2 bottles may be a bit different. B1/17 means batch 1 bottled in 2017. Redbreast releases every year a different version.

It is almost as if you drink the whisky straight from the cask itself.

TASTING:

NOSE: Very fruity, with fruit cake impression, with peach and apricots, some hints of red berries.

PALATE: Spicy and fruity : on top of Apricot and peach, there is banana and pear.

FINISH: Long, rich with spices, fruits and some malt.

MY TAKE ON IT:

I just acquired this one, on December 2017. A very enjoyable whisky worth having in your collection. You may better appreciate the taste with some water in it. For those who feel there is too much alcohol in it, go for the Redbreast 12 YO at 40%: you will still get the essence of this great whisky at a cheaper price.

WHAT TO EAT WITH?

Chocolate mousse or strawberries. Enjoy!

DID YOU KNOW?

A company called W & A Gilbey and chaired by Mr Gilbey was importing spirits from Europe mainland, mainly sherry (Spain), port (Portugal) and Cognac (France). They started to store local whiskey from Jameson in their empty casks initially filled with these spirits; after some maturation time, all customers appreciated the nice flavor added by this new aging way. The name of redbreast came after someone noticed that in the light, when looking at the surface of the whiskey in the bottle at a certain angle, there was a reddish color. Gilbey was also an ornithologist and, inspired by the red color and his passion for birds, named the whiskey after the robin-redbreast.
